This is a simple veggie side inspired by a Swedish restaurant in San Anselmo that my mom used to take me to back in the ’80′s. They served it over egg noodles, but I love the combination of ingredients, even sans pasta. So here it goes…
Serves 4
Ingredients
1 head red cabbage, shredded
1 yellow onion, chopped
2 crisp apples, sliced (I use Gala, but Golden Delicious would work well too)
1/4 cup poppy seeds
2 tablespoons coconut oil
salt & pepper
Preparation
Melt the coconut oil and saute the onions until tender.
Add cabbage and season with salt & pepper.
Stir and saute for about another 10 minutes.
Toss in apples and let soften.
Add poppy seeds before serving.
